Healthy Chicken Recipes
You sure know how difficult is to maintain a balanced and healthy diet all the time if you’re a young adult living on your own. Do you wake up with a sudden craving to have a better lifestyle and eat healthier? You fantasise about one-day learning how to prepare all those meals of colours you see online? But it looks too hard? Too much effort? Better give up and eat whatever you find on the fridge? Or maybe you’re a full-time working mum with children, worrying about not having enough time to prepare good quality meals for the family. Do you think that healthy is a synonym for time-consuming? Not with these healthy chicken recipes.
1. Chicken with Peppers and Mushrooms
Ingredients: 3 chicken breasts, 5 peppers, 5 mushrooms, spinach, garlic and seasonings.
Wash your tomatoes with boiling water to be easier to pare the skin. Cut in cubes or slices and put it in a skillet. Add a teaspoon of olive oil with grated garlic. Add salt and black pepper.
In another pan, use a bit of olive oil and grill your wings.
When the tomatoes have turned into a thick sauce, is time to mix everything in the same pan. Add parsley.
3. Al Forno Marinated Chicken Legs
Ingredients: 6 chicken Legs, 1 beer, garlic and seasonings.
Twenty-four hours before, or at least the night before, put the chicken legs in a recipient deep enough, such as a stockpot, to cover the whole chicken, the chicken legs, a can of beer, garlic (you can grate the garlic or slice) and seasonings of your choice.
Heat your oven at 175 Celsius/ Gas Mark 4. Grab a roasting pan and spread the chicken legs across the pan. Add mini potatoes with salt and oregano if you wish.
Pierce the chicken from time to time to know if is ready. Do the same to the potatoes.
4. Lemon Honey Chicken Wrap
Ingredients: 3 chicken breasts, tortillas, 1 full lettuce, 3 tomato and seasonings.
Heat the butter in the microwave. Remove tenderloin from the chicken breast. Afterwards, in a small bowl, add butter, lemon juice, a spoon of honey and fold. Rub the sauce onto the chicken breasts and place it on a pan. You should cook the chicken until has a golden colour, which is about 8 minutes.
Transfer the chicken to a cutting table and let it rest for 5 minutes. Wash the lettuce and tomatoes and cut them into slices. Do the same with the chicken once is not too hot to cut it. Place everything into the wrap and don’t forget the sauces!
5. Chicken Salad
Ingredients: 3 chicken breasts, 1 lettuce, 4 tomatoes, 4 cucumbers, 3 eggs, mozzarella cheese, croutons, unpitted black olives and seasonings.
The easiest recipe on the list is, of course, a salad! But salads can be delicious.
Start by grilling your chicken breasts.
Remove the tender, add salt and black pepper, and put the chicken breasts into the skillet. Add a bit of olive oil. Boil your eggs for about 10 minutes and wash the lettuce, tomatoes and cucumbers. Cut all vegetables into cubes except the lettuce. Peel the eggs and cut the chicken breasts.
In a big bowl, place the lettuce first and then add the rest of everything, including croutons and caesar sauce if you wish!
