1. Chocolate Brownie Cake

Starting off strong with a kid dessert recipe that is sure to get their tastebuds tingling! It is sure to be better than any brownie you can buy at your local store but there’s only one way to find out!

Ingredients:

  • 100g butter

  • 125g caster sugar

  • 75g light brown or muscovado sugar

  • 125g plain chocolate (plain or milk)

  • 1 tbsp golden syrup

  • 2 eggs

  • 1 tsp vanilla extract/essence

  • 100g plain flour

  • ½ tsp baking powder

  • 2 tbsp cocoa powder

Method:

  1. Start by preheating your oven to 180C/fan 160C/gas 4 and then find a 20cm cake tin to grease and line.

  2. Put the caster sugar, butter, brown sugar, golden syrup, and chocolate in the pan and melt gently on low heat until the consistency is smooth and free of lumps. Remove the pan from the heat.

  3. Break the eggs into the bowl and whisk with a fork until the mixture is light and frothy. Tip in the eggs, vanilla extract or essence, flour, baking powder, and cocoa powder to the chocolate mixture and mix thoroughly.

  4. Pour the mixture into the cake tin and place it on the middle shelf of the oven. Bake for 25-30 mins.

  5. Remove from the oven and allow to cool for about 20-30 minutes before cutting into slices and serving.

2. Cornflake tart

If it’s a quick and easy kid dessert recipe that you’re after, then you’re going to love this one! With a pastry case and jam base, it's yummy when served with lots of custard!

Ingredients:

  • 320g ready-rolled shortcrust pastry

  • plain flour, to dust

  • 50g butter

  • 125g golden syrup

  • 25g light brown soft sugar

  • 100g cornflakes

  • 125g strawberry or raspberry jam

  • custard, to serve

Method:

  1. Begin by preheating the oven to 180C/160C fan/gas 4.

  2. Unroll the pastry and lightly roll it out on a lightly floured surface until large enough to fit a 23cm loose-bottomed tart tin. Using the rolling pin, lift the pastry over the tin and then press into the corners and sides, leaving the extra pastry to hang over the rim. Trim this away, leaving just a small amount of excess pastry hanging over the side.

  3. Line the pastry with baking parchment and fill it with baking beans or uncooked rice. Bake for 15 minutes and then remove the parchment and beans, and then continue to bake for another 5-10 minutes until just golden. Take out from the oven and cut off any excess pastry from the edges using a serrated knife.

  4. Next up, heat the butter, syrup, and sugar in a small-sized pan with just a pinch of salt, making sure to stir frequently until melted and smooth. Fold in the cornflakes to coat in the butter mixture.

  5. Using a spoon, place the jam into the cooked pastry base, then level the surface. Put the cornflake mixture over the jam and lightly press down until all the jam is covered. Place the tart back in the oven for a further 5 minutes until the cornflakes and nice and golden and toasted. Leave to cool until just warm before slicing and serving with custard and enjoy this two of five kid dessert recipes!

3. Chocolate Rice Krispie cakes

These chocolate Rice Krispie cakes a true classic when it comes to kid dessert recipes. Decorate them with nuts, dried fruit, or even sweets for the ultimate after-dinner treat!

Ingredients:

  • 100g milk chocolate, broken up

  • 50g dark chocolate, broken up

  • 100g butter

  • 4 tbsp golden syrup

  • 100g Rice Krispies

To decorate

  • 50g milk chocolate, melted

  • sprinkles, mini marshmallows, nuts, dried fruit, or white chocolate buttons

Method:

  1. Start by placing the chocolate in a heatproof bowl with the golden syrup and the butter. Allow this to melt in 10-second increments in the microwave, or over a pan of simmering water. Stir until completely smooth, then take off the heat and stir in the Rice Krispies, lightly coating them with the chocolate until they are all completely covered.

  2. Split the mixture between however many fairy cake paper cases it will fit into. Leave to set either in the fridge for an hour or on the side.

  3. Drizzle with a little melted chocolate and decorate with sweets, dried fruit, or nuts while they are still wet enough to stick them on and enjoy this three of five kid dessert recipes!

4. Blueberry muffins

Make these super easy blueberry muffins for a fun weekend bake. You're just a few simple steps away from this delicious kid dessert recipe that can also be doubled up as breakfast (if you want to spoil them!)

Ingredients:

  • 100g unsalted butter softened, plus 1 tbsp, melted, for greasing

  • 140g golden caster sugar

  • 2 large eggs

  • 140g natural yogurt

  • 1 tsp vanilla extract

  • 2 tbsp milk

  • 250g plain flour

  • 2 tsp baking powder

  • 1 tsp bicarbonate of soda

  • 125g pack blueberries (or use frozen)

Method:

  1. Preheat your oven to 200C/180C fan/gas 6 and line a 12-hole muffin tin with paper cases. Beat together the butter and caster sugar until pale and fluffy. Add the eggs and beat in for a further minute, then mix in the yogurt, vanilla extract, and milk. Combine the flour, baking powder, and bicarbonate in a bowl with ¼ tsp fine salt, then tip this into the wet ingredients and stir in. Lastly, fold in the blueberries and split the mixture between the muffin cases.

  2. Cook for 5 minutes, then reduce to 80C/160C fan/gas 4 and bake for a further 15-18 minutes until risen and golden, and a metal skewer inserted into the center comes out mixture-free.

  3. Allow to cool in the tin for about 10 minutes, then carefully place onto a wire rack to finish cooling. These delicious muffins will keep for 3-4 days in an airtight container. After a few days, place them in the microwave for 10-15 secs on high to freshen up and enjoy this four of five kid dessert recipes!

5. S'mores dip

A campfire favorite with a twist, this kid dessert recipe is guaranteed to be a hit and it’s mega easy to make! Serve with a side of fruit if you want a health-kick.

Ingredients:

  • 200g milk chocolate

  • 2 tbsp full-fat milk

  • 350g mini marshmallows

To serve

  • 100g digestive biscuits

  • 100g strawberries, washed and hulled

  • 100g pineapple chunks

  • skewers

Method:

  1. Start by heating the chocolate, milk, and 200g of the marshmallows in an ovenproof frying pan over low heat until the consistency is melted and smooth. Top with the remaining marshmallows in circles so that the whole surface is covered.

  • Grill on high for about 1-2 minutes until the marshmallows are nice and toasted. Serve with biscuits and strawberry and pineapple skewers for dunking and enjoy this final of kid dessert recipes!
