5 SLOW COOKER CHICKEN RECIPES
Slow Cooker Chicken Recipes #1 = Crockpot Chicken and Dumplings
Ingredients
4 boneless skinless chicken breast (cooked and shredded)
2 cans cream of chicken soup
1 can cream of mushroom soup
1 can of chicken broth
2 tsp garlic
Salt and pepper to taste
4 tbls butter
Dumplings
1 cup of flour
10 tablespoons ice water
Method
In a bowl, combine the first six ingredience and mix well.
Pour mixture into slow cooker and add butter.
Cook the broth on high for 2 hours.
For dough for dumplings and cut into strips.
After 2 hours, stir broth and add dumplings
Finish cooking on high for one hour.
Slow Cooker Chicken Recipes #2 = Chicken Cacciatore
Ingredients
2 to 3 pound chicken breasts or possibly parts
2 teaspoon seasoned salt
1/4 c. oil
1 pkg. spaghetti sauce mix
1 pound can tomatoes
1/4 c. dry white wine - i want! 👌
Method
Sprinkle chicken with salt.
Heat oil and brown chicken.
Put chicken in cooker and pour off oil from skillet.
Combine remaining ingredients in the skillet.
Cook and stir till warm. Pour over chicken.
Cook low 5 to 6 hrs.
Serve over spaghetti or possibly rice or not

Slow Cooker Chicken Recipes #3 = Chicken Tortilla Soup
Ingredients
2 tablespoons extra-virgin olive oil
1 1/2 pounds boneless, skinless chicken thighs
Kosher salt and freshly ground black pepper
1 large yellow or white onion, finely chopped (about 1 1/2 cups)
1 large jalapeño, finely chopped (about 1/3 cup)
3 medium cloves garlic, minced (about 1 tablespoon)
1 1/2 teaspoons ancho chili powder
1 1/2 teaspoons ground cumin
1 teaspoon unsweetened cocoa powder
1 cup lager-style beer
2 bay leaves
3 sprigs fresh thyme
1 chipotle chile en adobo, minced
1 (14.5-ounce) can diced tomatoes, preferably fire-roasted
1 tablespoon tomato paste
2 teaspoons apple cider vinegar
1 (4-ounce) can diced green chilies
6 cups homemade or store-bought low-sodium chicken stock
To Serve:
1 avocado, diced
1 medium red onion, diced
Sour cream
Chopped fresh cilantro leaves and fine stems
Shredded cheddar cheese
Crushed tortilla chips or fried fresh corn tortillas cut into strips
2 limes, cut into wedges
Hot sauce
Method
Heat oil in a Dutch oven over medium-high heat. Season chicken with salt and pepper. When oil is shimmering, brown chicken on all sides, about 8 minutes total. Transfer chicken to the bowl of a slow cooker.
Reduce the heat to medium. Add onion and jalapeño to the same pan and cook, stirring often and scraping up browned bits from the bottom of the pan until they start to soften, about 6 minutes. Add garlic and continue cooking until fragrant, about 1 minute more. Add chili powder, cumin, and cocoa powder and cook until fragrant, about 30 seconds. Add beer, raise heat to medium-high and bring to a boil.
Transfer to the slow cooker along with the bay leaves, thyme, chipotle pepper, tomatoes, tomato paste, vinegar, green chiles, and chicken stock. Season with salt and pepper. Cook on low setting or until chicken is cooked through and fall-apart tender, at least 4 hours.
Discard all bay leaves and the thyme sprigs. Shred chicken using two forks. Taste and adjust seasonings, if needed.
Ladle soup into bowls and garnish with avocado, onion, cilantro, cheddar and a sprinkle of tortilla chips. Pass limes and hot sauce at the table.
Slow Cooker Chicken Recipes #4 = Chicken Noodle Soup
Ingredients
32 oz reduced-sodium chicken broth
3 cups water
2-1/2 cups chopped, cooked chicken
1-1/2 cups sliced carrots, (about 3 medium size)
1-1/2 cups sliced celery (3 ribs)
1-1/2 cups sliced mushrooms
1/4 cup chopped onion
1-1/2 tsp dried thyme, crushed
3/4 tsp garlic pepper
3 oz reduced-fat Neufchatel cheese, cut up
2 cups uncooked egg noodles
Method
In a 5 or 6 quart slow cooker combine together the chicken broth, water, chicken, carrots, celery, mushrooms, onion, thyme and garlic pepper.
Cover and cook on LOW 6 to 8 hours or HIGH 3 to 4 hours. #setitandforgetit
If using LOW turn cooker to HIGH setting. Stir in Neufchatel cheese until combined. Stir in uncooked noodles. Cover and cook for 20 to 30 minutes more or just until noodles are tender.
Slow Cooker Chicken Recipes #5 = White Chili Chicken
Ingredients
1 slow cooker liner
6 cups cubed skinless, boneless chicken or (leftover turkey)
2 (15 oz) cans navy beans, drained
1 cup canned chicken broth
1 cup chopped onion
1 cup finely chopped red bell pepper
1 jalapeño pepper, seeded, finely chopped
2 garlic cloves, minced
2 tsp ground cumin
1 tsp dried oregano leaves
1/2 tsp salt
1/2 tsp cayenne pepper
Method
Open the slow cooker liner and place it inside a 5 to 6 quart slow cooker. Fit liner snugly against the bottom and sides of the bowl and pull top of liner over rim of bowl.
Place all the ingredients in the lined-slow cooker and stir gently to mix. Cover with the lid.
Cook on LOW 6 to 7 hours or HIGH 3 to 4 hours until mixture is hot and bubbly and the sauce slightly thickened.
Carefully remove the lid to allow steam to escape.
Serve the chili directly from the slow cooker.
Do not lift or transport the liner with the food inside. Cool the slow cooker completely, remove the liner and toss.
