Sweet Potato Wedges

We may disagree on many things. Politics, music, what film to watch. But one thing we can all agree on is that sweet potato wedges are one of the yummiest things to ever grace our tastebuds! If you’ve never had them before then you are seriously missing out. But fear not, for I have compiled the ultimate sweet potato wedges recipe that will put regular potato wedges to shame!

Sweet Potato Wedges: What are they?

For those of you who have never had the pleasure of eating sweet potato wedges, allow me to introduce them to you. The sweet potato is a dicotyledonous plant, belonging to the bindweed or morning glory family. Sounds interesting right! Believe it or not, there are over 400 types of sweet potato around the world, but the most common varieties are the Beauregard, the jewel, and the garnet. They are super easy to grow in your back garden and are choc-full of nutrients, including beta-carotene, an orange pigment that is converted into Vitamin A in your body and helps to improve the skin and protect your vision.

Sweet Potato Wedges: Recipe

Note: This recipe serves 3 people so you may need to adjust accordingly depending on how many of you there are in your family.

Ingredients:

2 large sweet potatoes (Beauregard for best results) washed peeled, and cut into wedges, 1 tablespoon olive oil avocado oil, or oil of choice, 1/2 teaspoon paprika, sea salt and pepper to taste

Method

Start by preheating your oven to 400 degrees Fahrenheit. You then need to line your baking sheet with parchment paper. Once you’ve done this, place the wedges in a bowl, adding one tablespoon of olive oil, a pinch of salt and pepper, and 1/2 teaspoon of paprika. For best results, toss with your hands to fully coat the sweet potatoes with the mixture.

Place them in the oven and cook for around 35-45 minutes, or until the sweet potato wedges are soft and slightly brown at the edges. Garnish them with a sprinkle of salt and serve hot.

To add some variety to them, try adding crushed garlic, herbs like thyme and rosemary, or crushed red pepper.

Sweet Potato Wedges: Other ways you can eat them

Note: These recipes serve 4 so feel free to adjust accordingly.

Option 1: Sweet Potato Wedges Salad

There is a multitude of ways you can incorporate sweet potato wedges into a salad but this is my recommendation. It’s healthy, easy to make, and more importantly, very tasty!

Ingredients:

2 large sweet potatoes, each cut into 6 long wedges, 1 teaspoon salt, 1/2 teaspoon ground black pepper, 2 tablespoons lemon juice, 2 tablespoons olive oil, 1 cup parsley leaves, 2 cups grape tomatoes (halved), 3 tablespoons toasted pecan pieces, and 3 tablespoons crumbled feta cheese

Method

Start by preheating your oven to 375 degrees Fahrenheit. Place your sweet potatoes on a baking sheet coated with cooking spray, in a single layer. Coat them with more cooking spray and season with a pinch of salt and pepper.

Bake for around 25-30 minutes, or until tender. While they are cooling down, whisk the lemon juice, the remaining salt and pepper, and then stir in the parsley, tomatoes and pecans.

To serve, place your sweet potato wedges on a platter and top with salad and a sprinkle of cheese.

Option 2: Sweet Potato Wedges Noodle Soup

This one is perfect for those colder days when you just want something to warm you up from the inside!

Ingredients:

1 tablespoon butter, 1 medium sweet potato, peeled and diced, ½ cup chopped green onions, 1 medium zucchini, diced, 1-2 cups cooked protein of choice, diced, 8 cups chicken stock, 1 cup uncooked pasta of choice, salt and pepper, to taste and chopped green onions, lemon wedge and chilli slices for garnish

Method

Heat butter over medium heat, in a large soup pot. Add in your sweet potato wedges and green onions and cook for 3 minutes. You then add in your zucchini, whichever protein you desire and chicken stock. Bring to a simmer.

Add in the pasta and cook until al dente (not fully cooked). Season with salt and pepper and garnish with green onions, a lemon wedge and chilli slices before serving hot.

Option 3: Sweet Potato Wedges Chicken Skewers

Ingredients:

2 tbsp maple syrup, 2 tbsp mustard, 2 medium sweet potatoes, 1 lb chicken breast, cut into large chunks, 2 medium bell peppers, cut into one-inch pieces and salt and pepper to taste

Method

In a large bowl, whisk together the maple syrup, mustard, and salt and pepper. Mix in the sweet potatoes, chicken and bell peppers, making sure they are all fully coated. Marinate for at least 30 minutes. Place the items onto skewers and cook until the chicken is cooked all the way through. Serve warm, or at room temperature.
