1. Breakfast flapjack

Note: This recipe serves 12 so adjust according to how much you want.
Ingredients:
50g mixed dried fruit (a mixture of raisins, sultanas and apricots is tasty)
50g mixed seed
140g oats
25g multi-grain hoop cereal
100g butter
100g light muscovado sugar
100g golden syrup
Method:
Grab yourself a 20cm square cake tin and grease and line with baking parchment.
Place your dried fruit of choice into a mixing bowl, adding the seeds, oats, and cereal. Mix together.
You then need to put the sugar, butter, and golden syrup into the saucepan and cook gently on the hob, stirring with a spatula until the butter and sugar are completely melted.
Remove the pan from the heat and pour the dry ingredients into the saucepan. Mix until all the ingredients are well-combined and coated with the syrup mix.

200g plain flour

200ml milk
1 large egg

Method:
Start by placing the flour, cream of tartar and bicarbonate of soda into a bowl. Mix well with the fork and then put the golden syrup into the dry ingredients along with the blueberries and the lemon zest.
You then need to pour the milk into a measuring jug. Now break in the egg and mix well with a fork. Pour the majority of the milk mixture into the bowl and mix well with a spatula (preferably rubber). Gradually add more milk until you get a smooth, thick, pouring batter.

Ingredients:
2 large eggs
150ml pot natural low-fat yogurt
50ml rapeseed oil
100g apple sauce or pureed apples
1 ripe banana, mashed
4 tbsp clear honey
1 tsp vanilla extract
200g wholemeal flour
50g rolled oats, plus extra for sprinkling
1½ tsp baking powder
1½ tsp bicarbonate of soda
1½ tsp cinnamon
100g blueberry
2 tbsp mixed seed (pumpkin, sunflower, and flaxseed)
Method:
Start by preheating your oven to 180C/160C fan/gas 4 and line a 12-hole muffin tin with 12 large muffin cases. In a jug, mix the eggs, yogurt, oil, apple sauce, banana, honey, and vanilla, tipping the remaining ingredients, except the seeds, into a large bowl. Then add a pinch of salt and mix to combine.
Place the wet ingredients into the dry ones and mix until you have a smooth batter (be careful not to overmix though!) Split the batter between the cases and dust the muffins with the extra oats and seeds.
Bake until golden and well-risen (20-25 minutes), using a skewer inserted into the middle to determine whether they are cooked all the way through. Take out from the oven and transfer to a wire rack. Leave to cool.

5. Mango and banana smoothie
