No food for kids party-list would be complete without the statement piece; the birthday cake! It’s no secret that kids love chocolate and to make sure everyone is able to enjoy it, I’ve provided a gluten-free vegan one for you to try your hand at.

Ingredients

Sponge: 240g gluten-free flour, 260g caster sugar, 60g cocoa powder, pinch of salt, 3/4 tsp xanthan gum, 2 tsp baking powder and 2 tsp baking soda

Frosting: 200g coconut cream, divided, 200g dark chocolate, chopped

Optional: chocolate shavings and cherries for decorating

Method

Sponge:

Begin by preheating the over to 335 degrees Fahrenheit and grease 2 x 6-inch circular cake tins with vegetable oil. Feel free to also line the bottoms with greaseproof paper.

In a large bowl, mix all the dry ingredients together. In a separate bowl, mix all the wet ingredients together and add to the dry ingredients. Stir them together until you are left with a smooth batter.

Divide the batter between the two cake tins as evenly as you can, smoothing out the tops, and then place in the oven to bake for 40 minutes (or until the tops are bouncy to the touch). To be extra sure, insert a toothpick into the centre of the cake and see if it comes out clean. Allow to cool while you prepare the frosting.

Frosting:

In a medium saucepan, heat up 1/2 of the coconut cream until piping hot. Add the dark chocolate to a heat-proof bowl, and pour over the coconut cream. Let this sit for around 5 minutes, and then mix well until you reach a glossy, intense, dark ganache. Allow to cool until lukewarm.

In a separate bowl, place the other half of the coconut cream. One tablespoon at a time, stir the ganache into the cream until you are left with a smooth, easily spreadable frosting.

It’s then as simple as layering the sponges together with the frosting. Make sure to do this as quickly but as carefully as possible after you’ve prepared it. The longer you leave it, the more difficult it will be to spread. Decorate with your topping of choice and more importantly, enjoy!
