Papaya Salad
Papaya salad is one of the best salads with shredded green papaya, long beans, and tomatoes. Papaya salad is actually one of my to go healthy meals that are actually edible and delicious. As we know that papaya is filled with nutrients therefore papaya salad is a great source of vitamins as well as healthy fiber. It is also full of enzymes that boost our digestive health. PAPAYA SALAD RECIPE
PAPAYA SALAD INGREDIENTS
2 small cloves garlic, peeled
¼ teaspoon salt
2 fresh serrano chilies or bird chilies, sliced
½ teaspoon raw sugar or white sugar
1 tablespoon dried shrimp (optional)
2 tablespoons fresh lime juice
1 to 2 tablespoons fish sauce
2 tomatoes, coarsely chopped
½ pound long beans, trimmed and cut into 1 1/2-inch length (optional)
1 small to medium green (unripe) papaya (see Note)
Lettuce for serving (optional)
PAPAYA SALAD PREPARATION
In a blender, blend garlic, salt, peanuts, chilies, sugar, and shrimp into a paste.
The transfer to a large bowl and mix in lime juice and fish sauce.
Use a spoon to lightly crush tomatoes and beans, then add to the bowl and mix lightly.
Peel and grate papaya, discarding seeds and inner membrane. There should be 3 to 5 cups.
Add papaya to the bowl and gently but thoroughly stir together. Taste for seasoning.
Mound in a bowl and if desired, line bowl with lettuce leaves beforehand. Sprinkle with peanuts and serve.
