Bubble and Squeak
Bubble and Squeak is a classic British breakfast dish made of fried or mashed potatoes and cabbage. Bubble and squeak has been around since the 1800s and it’s a great way to use up those roasts dinner leftover. There are no hard-and-fast rules for this recipe except for mashed potatoes which is the main ingredient that holds the dish together. Use the bubble and squeak to use up whatever you have left from dinner and transform it into something delicious. Here’s how to make use of something left from dinner and turn it into Bubble and Squeak.
Ingredients needed to make Bubble and Squeak
6 tablespoons of unsalted butter or vegetable oil
Half cup of finely chopped onion
2 cups of mashed potatoes
Finely chopped 1 cup leftover vegetables (cabbage, kale, peas, cooked swede, cooked carrots, and/or cooked Brussels sprouts)
Optional: Bacon, leftover roast, bangers, and/or ham, chopped
Salt, to taste
Freshly ground black pepper, to taste
Optional: fried or poached eggs, for serving
Directions for Bubble and Squeak
Melt the butter over medium flame in a frying pan for around 3 minutes or until soft and translucent and ensure that it doesn’t brown. Add the finely chopped onion and fry gently.
Switch up the flame ever so slightly and add the mashed potato and all the leftover vegetables chopped up. Fry for at least 10 minutes to ensure that the potato and vegetables are thoroughly reheated and continually turning them over in the melted butter.
Vegetables outside the edges are often intended to brown, so often push the mixture into the pan to brown a bit before turning.
When the mixture is heated right through, send the vegetables one long final press onto the pan’s base with a spatula when the mixture is heated right through, and cook for 1 minute. Repeat and turn over. To taste, add salt and pepper.
Serve Bubble and Squeak with either a fried or poached egg on top.
